Whatcha Eatin'? Monday, April 23rd
Last week was a bust. I didn't even plan a menu because I had a sick kiddo. I felt completely unorganized and we ate out...twice. That is BAD! This week, I am ready with a plan. We are getting ready to have a garage sale on Friday & Saturday, so we are making this an easy week. With the exception of Saturday, when we are having my parents over for dinner. Hope you have a fabulous week!
Sunday: Meatloaf, Party Potatoes, Corn, Rolls
Monday: Chicken Fettuccine Alfredo (using this recipe, but switching the tortellini for Fettuccine since we have that on hand and tortellini is so stinkin' expensive), Salad
Tuesday: Tacos, Mixed Fruit
Wednesday: Brown Sugar Chicken, Baby Red Potatoes, Green Beans, Rolls
Thursday: BBQ Beef Sandwiches, Veggies & Dip, Chips
Friday: Frozen Pizza...My Specialty!
Saturday: Steak, Garlic Smashed Potatoes, Green Beans, Salad, Rolls, Key Lime Pie for dessert (My mom's favorite.)

Whatcha Eatin'?: Monday, April 8th
Hope you all had a wonderful Easter! We enjoyed time at my in-laws house. My father-in-law is a former chef so we get really lucky and never have to do much of the cooking. This year I did bring a Cookies & Cream Dessert which was delicious. (Un)Fortunately we have a little leftover, which is not good for my diet. We were also lucky enough to bring home some leftover chicken which I will be using this week for a couple of my meals.
Here is what I came up with for this week:
Monday: Taco Casserole, Applesauce
Tuesday: Chicken & Noodles, Mashed Potatoes, Corn
Wednesday: Slow Cooker Pot Roast, Rolls
Thursday: Chicken Quesadillas, Mixed Fruit
Friday: Domino's Pizza (Got a Free Artisan Pizza here today!)

Last week I took a break from menu planning and tried to wing it. I found that I was way more stressed and crabby last week. Hoping that this week is much better! Here is what we are eatin' this week:

Whatcha Eatin'? Monday, March 12th
We are coming off of a very busy weekend. Saturday night we invited the hubby's family over for dinner. Then, we spent Sunday night with my family celebrating March & April birthdays. Little Bro has an April birthday, so he was excited to get some new toys to play with.
In the midst of all this craziness, we had to get used to the time change. I really don't understand why it is still necessary to "spring foward" and "fall back". It just messes up my kiddos' schedule and takes about a week to get used to. I thought this morning the boys would sleep in till at least 9:00, which would be the old 8:00, but nope...they were up bright and early at 8:00. Okay, so this isn't early, but I was wide awake until midnight last night and Baby Sis woke up twice because of her teething and first cold. I was hoping to get some things accomplished before the kiddos were up this morning, but that didn't happen! My "To Do" list just keeps getting longer and longer. I feel like I need to hire a babysitter for an entire day so I can finally get some things accomplished. Seriously...how do you working mothers do it?
Well, at least I managed to plan our menu for this week:

Monday: Brown Sugar Chicken, Baby Red Potatoes, Green Beans
Tuesday: Cheeseburger Soup, French Bread ***Family Favorite***
Wednesday: Chicken Tortellini Alfredo, Salad, Breadsticks
Thursday: Meatloaf, Party Potatoes (I'll share recipes on Friday), Corn, Dinner Rolls
Friday: Leftovers or Take out
Saturday: Make Your Own Pizzas, Veggies & Dip

Whatcha Eatin'?: Monday, March 5th Edition
Some of you may have noticed that we have cheeseburgers on the grill at least once a week around here. This is usually my night off from cooking and my hubby does all the work. We have had such a mild winter that it hasn't really changed our little tradition. However, it was really funny when it started snowing like crazy last night while my hunky hubby was grilling wearing his flip flops. I wish you could see the enormous snowflakes in the picture.
We ended up getting an inch of snow that will probably melt by this afternoon. This week's menu is kind of boring, but here it is:
Sunday: Last night we had Cheeseburgers, French Fries, Baked Beans, Cottage Cheese
Monday: Shepherd's Pie, Salad, Rolls
Tuesday: Creamy Italian Chicken, Noodles, Green Beans
Wednesday: Tacos, Mixed Fruit
Thursday: Spaghetti Pie, Corn, Garlic Bread
Friday: Frozen Pizza

Whatcha Eatin': Monday, February 20th
Wow, the weekend flew by! We had a wonderful one! We were able to have a little date night on Saturday. We have only had a total of three date nights in the past 4 1/2 years, so we enjoy every one of them! We spent a little time shopping for a new kitchen/dining table. We have been saving for the last year to replace the one that we currently have. We did end up finding one that we liked and paid cash for it. What a relief not to have another payment! After a our furniture shopping, we hit Buffalo Wild Wings for dinner. This may surprise you, but it was a first for both of us. I guess that shows how little we get out! It was so nice to eat without having to refill drinks, wipe up spills, etc. Then, we hit up Dick's Sports and shopped for the hubby. It was a wonderful night. We can't wait for our next one, which will probably be at least six months!
I didn't really have a lot of energy while planning my menu after our date, so it might seem a bit boring. However, I must recommend that you try out the Sour Cream Ritz Chicken. It is super easy and very tasty!

Tuesday: Broccoli Cheese Soup, Grilled Ham & Cheese Sandwiches

Friday: Cheeseburgers on the grill or griddle, French Fries, Baked Beans, Cottage Cheese
Saturday: Homemade Pizza, Veggies & Dip, Chips

Whatcha Eatin'? Monday, February 13th
I love Mondays! Yep...you heard me say that! I love getting a fresh start every week. It seems like Mondays are always my busiest days because I slack off on the weekends. I am feeling motivated this morning, so hopefully I get a lot accomplished in my basement for the 29 Day Organizational Challenge!

Whatcha Eatin'? January 30th Edition
This week is a busy one! My "to do" list is a mile long, so I have two meals that will be cooked in the crockpot this week. Mommy is having a Thirty One Open house this week on Thursday, so Dad is in charge. The boys love having their Dad all to themselves, not sure Dad would agree.
Every week I try to make at least one new recipe to add to my list of repeat meals. This week's recipe we tried out last night and it was delicious! It was so yummy and rich that we were full after one helping. That means I have leftovers for lunch! The only complaint that I have with this recipe was the time and effort it took to make it. We will keep this on our list to make again.

Whatcha Eatin'? January 23rd Edition
Last week's new recipe was a disappointment. My sister-in-law had recommended the Pizza Tot Casserole, so I thought it would be a hit. It was pretty blah. But again, we are not fans of Tater Tot Casserole. If you are, you might like this. This week's new recipe, however, ROCKED! We had it last night. It was SIMPLE and TASTY! I highly recommend it! Everyone ate it up!

Whatcha Eatin'? Monday, November 14th
Back to menu planning! It makes my life so much easier when I know what I am making each night. I am still on my special low carb/high protein diet, so I will be sharing what I am making for everyone else! :-) I basically eat cottage cheese, applesauce, grilled chicken & veggies. Super boring...let me know if you know how to spice things up! Here is what the rest of the family is eating this week:

Whatcha Eatin'? Monday, October 24th
Well, I went a little hog wild with the Pampers deal at CVS this weekend, so our dinner budget for this week is shot. Therefore, we are trying to eat as much from our pantry & freezer as possible! Thankfully, we have a freezer full of meat. That means I have to be a bit creative or just have plain boring meals. I am still on my high protein/low carb diet, so my meals will be repetitive. Here is what I came up with for this week:
Sunday: Steak, Baby Red Potatoes, Green Beans (I had a 4 oz. steak and green beans.)
Monday: Spaghetti, Salad, Corn & Garlic Bread (I will be having a salad with grilled chicken)
Tuesday: Chicken or Beef Tacos (I will have a Chicken Taco made with Salsa, Chicken, FF Sour Cream, FF Cheese & Iceberg Lettuce on a Whole Wheat Wrap)
Wednesday: Chicken Pot Pie (I will have Grilled Chicken & Steamed Veggies)
Thursday: Cheeseburger Rice, Green Beans, Salad (I will be having a salad with grilled chicken.)
Friday: Cheeseburgers, French Fries, Baked Beans, Cottage Cheese (I will have a hamburger on a deli thin bun with a salad.)
Saturday: Homemade Pizza, Veggies & Dip (I will make a chicken pizza on a whole wheat wrap with BBQ sauce instead of pizza sauce, topped with FF cheese).

Broken Oven = No Menu Plan

Whatcha Eatin'?
I decided I better get back to planning our menu for the week. For the past three weeks, I have been on a new diet or should I say "eating plan" to help me lose my baby weight. Basically, it consists of five meals with one protein and one "good" carb. It has been quite the adjustment, but finally I am getting used to it. It has been difficult making dinner lately because my children and hubby are not on the same meal plan. I tried to make my menu this week based on what I could eat so I wouldn't have to make two completely different meals. I highlighted my menu in red.
Sunday: One Dish Chicken & Stuffing, Mashed Potatoes, Corn
(I ate one of the grilled chicken breasts on a salad)
Monday: Chicken & Sour Cream Enchiladas, Carrots, Applesauce
(I am using fat free sour cream and fat free cheese, as well as Whole Wheat tortillas)
Tuesday: Pot Roast (I can eat everything but the potatoes!)
Wednesday: Grilled Cheese and Homemade Tomato Soup or Healthy Turkey Chili
(I will be eating the Turkey Chili)
Thursday: Lasagna Casserole, Salad, Garlic Bread (I am having leftover Chili)
Friday: Cheeseburgers, Baked Beans, French Fries, Cottage Cheese
(I will be having a hamburger on a deli thin bun with lettuce, onion, & Fat Free Mayo)

This is going to be one crazy busy week. I am trying to get ready for a garage sale on Friday & Saturday. Also, I have a Thirty One Party this week. Instead of doing any new recipes, I am trying to eat from our pantry. This is what I came up with using what we had on hand.

Tuesday: Cheesy Enchilada Hamburger Helper (this is the ONLY hamburger helper that Hubby will let me make. It really is pretty good!), Fruit

Thursday: Cheesy Chicken Casserole, Peas (will share recipe this week)
Friday: Frozen Pizza, Veggies & Dip (Boy's Night with Daddy...Mommy has a Thirty One Party)
Saturday: Wedding (Woo hoo! No cooking!)
Sunday: Chicken'N' Noodles, Mashed Potatoes, Corn, Rolls

Whatcha Eatin'?
We have a busy week ahead, so planning in advance is so helpful. Monday, I am taking a meal to a my cousin who just had a new baby, so we are eating something simple. I had planned to do a big pot of soup for both of us, but it is supposed to be 90 degrees out. Therefore, I am making them Lasagna Casserole (we had it last week), salad, corn, garlic bread and apple pie for dessert for their family. I did make an Apple Pie for us too. Then, on Wednesday I have a Thirty One Party so it is "Boys Night" with Daddy while Baby Sister will be with Grandma. Finally, on Saturday, we have a cookout to go to.

Whatcha Eatin'?
Whew...this weekend was super busy, but wonderful. I absolutely love this fall weather that we are having! I can't wait to make chili for the first time this fall. I Love the smell of chili simmering all day...yum! We will also be trying out a new recipe for Philly Cheese Steak in the crockpot.

Whatcha Eatin'?
I am really liking this whole menu planning thing! It makes 5:00 so much easier when I know what I am making for dinner. Hubby likes it too! He gets to come home from work to a delicious (yes, he better say that!) meal and a happy wife. My goal with this menu planning is to find 30-45 recipes that we enjoy, so I am not repeating meals and we don't get burnt out. Have I mentioned that my hubby will not eat another "skillet sensation" in his lifetime? Our first year of marriage consisted of boxed or bagged dinners because I was clueless! Menu planning is a great way to add variety to our meals and make life easier.

Whatcha Eatin'?
Wow, this weekend was crazy busy, but I still found the time to plan out our weekly menu. This week, I am going to be ambitious and try making homemade french bread. Last week, we were pleasantly surprised when a cousin of mine showed up with a yummy meal that included this most delicious french bread. I have never made bread before, so we'll see if it works out!

Whatcha eatin'?
When I was pregnant with my baby girl, I actually made several meals for the freezer so I wouldn't have the stress of making dinner with a newborn. Well, TEN weeks later, I still have a meal in the freezer. It was the first time that I have ever frozen a dish with rice in it. We are hoping it turns out. If not, we always have FROZEN PIZZA! Also, my mother has TONS of tomatoes from her garden, so we are going to can tomato soup. Yummy! I'll share the recipe sometime this week.
